We just added a nice feature on the people record under the System tab that allows a user with Edit role to manually unsubscribe (optout) a person from specific email addresses.

Don't forget about the Unsubscribe link you should add to your targeted emails that allows recipients to optout themselves. But sometimes, you just need to do this for a person, so this is a very handy new feature.
